Description

These Taco Tortilla Roll-Ups are a delicious and easy-to-make appetizer perfect for parties, potlucks, or a flavorful snack. Cream cheese, sour cream, salsa, taco seasoning, and shredded cheddar cheese combine with fresh veggies and optional black olives, all rolled up in soft flour tortillas and chilled until ready to serve.

Ingredients

Scale

Filling

  • 1 (8 oz) package cream cheese, softened
  • 1 cup sour cream
  • 1 cup salsa
  • 1 packet taco seasoning mix
  • 2 cups shredded cheddar cheese
  • 1 cup diced tomatoes
  • 1/2 cup diced green onions
  • 1/4 cup chopped cilantro
  • 1/2 cup sliced black olives (optional)

Other

  • 8-10 large flour tortillas

Instructions

  1. Prepare the Filling: In a mixing bowl, blend the softened cream cheese, sour cream, salsa, and taco seasoning mix until smooth and well combined.
  2. Add Toppings: Mix in shredded cheddar cheese, diced tomatoes, green onions, cilantro, and black olives (if using) until everything is evenly combined for a flavorful filling.
  3. Assemble the Roll-Ups: Spread a generous amount of the filling evenly over each flour tortilla, making sure to leave a small border around the edges for easy rolling.
  4. Roll Up: Tightly roll each tortilla from one end to the other to hold the filling securely. Repeat with all the tortillas and filling.
  5. Chill and Slice: Place the rolled tortillas seam side down on a plate or baking sheet. Cover with plastic wrap and refrigerate for at least 1 hour to allow the roll-ups to set and flavors to meld.
  6. Serve: Unwrap and slice the chilled roll-ups into 1-inch thick rounds using a sharp knife. Arrange bite-sized rounds on a platter and serve chilled for best taste and texture.

Notes

  • For an extra kick, add finely chopped jalapeños to the filling.
  • Use whole wheat or gluten-free tortillas to accommodate dietary preferences.
  • The roll-ups can be made a day ahead and stored covered in the refrigerator.
  • Serve with additional salsa or sour cream on the side for dipping.
  • Optional black olives add a briny flavor but can be omitted if preferred.
