Ingredients
Scale
Noodles
- 8 oz wide Lo Mein noodles, cooked and rinsed
Protein and Aromatics
- 1 tablespoon peanut oil
- 1 pound ground pork
- 1/4 cup sliced green onions, plus 2 tablespoons sliced green onions for garnish
Sauce
- 1/2 cup low-sodium chicken broth
- 3 tablespoons mirin
- 2 tablespoons dark soy sauce
- 1 tablespoon minced garlic
- 2 teaspoons grated ginger
- 1 teaspoon sesame oil
- 1/2 teaspoon sriracha
Vegetables
- 4 cups coleslaw mix
Instructions
- Cook the noodles: Boil the wide Lo Mein noodles following the package instructions until they reach a tender texture. Drain the noodles and rinse them under cold water to stop cooking and prevent them from sticking together. Set aside while you prepare the other ingredients.
- Brown the pork: Heat the peanut oil in a large skillet over medium-high heat. Add the ground pork along with 1/4 cup sliced green onions. Cook, stirring frequently, until the pork is fully browned and cooked through, about 5 to 7 minutes.
- Prepare the sauce: In a small bowl, whisk together the low-sodium chicken broth, mirin, dark soy sauce, minced garlic, grated ginger, sesame oil, and sriracha until well combined. This fragrant sauce will add depth of flavor to the dish.
- Combine and toss: Add the cooked noodles, coleslaw mix, and the prepared sauce to the skillet with the browned pork. Toss everything together thoroughly and cook for an additional 2 to 3 minutes, ensuring the noodles and vegetables are evenly coated with the sauce and heated through.
- Garnish and serve: Remove the skillet from the heat and sprinkle the remaining 2 tablespoons of sliced green onions on top for a fresh, vibrant garnish. Serve the noodle bowl immediately for the best taste and texture.
Notes
- You can substitute ground chicken or turkey for pork if preferred.
- Adjust the sriracha quantity to control the heat level.
- Use fresh ginger and garlic for the most vibrant flavor.
- If you can’t find coleslaw mix, shredded cabbage and carrots work well.
- For a vegetarian version, substitute pork with tofu and use vegetable broth.
