- 8 oz Mushrooms (quartered)
- 2 cups Baby Bok Choy (halved or chopped)
Liquids & Broth
- 6 cups Low-Sodium Vegetable Broth
- 1 tbsp Fresh Lime or Lemon Juice
Seasonings & Spices
- 1 tsp Turmeric Powder
- 1 tsp Ground Black Pepper

- 1 handful Fresh Cilantro (chopped)
- 4 oz Thin Rice Noodles
Instructions
- Heat Aromatics: Heat oil in a pot over medium heat if using. Add bay leaves, garlic, and ginger, and sauté for 1-2 minutes until fragrant.
- Cook Celery: Add chopped celery and cook for another 2-3 minutes until softened.
- Add Broth & Simmer: Pour in the low-sodium vegetable broth and bring to a gentle simmer for about 5 minutes.
- Season: Stir in turmeric powder and ground black pepper. Season with salt and red chili flakes or chili garlic sauce according to your taste preference.
- Add Onion and Mushrooms: Incorporate the diced onion and quartered mushrooms, allowing them to simmer for 5-7 minutes until tender.
- Add Bok Choy and Noodles: Add baby bok choy and rice noodles, cooking until the noodles are tender, about 3-5 minutes.
- Finish & Serve: Remove from heat and stir in chopped cilantro and fresh lime or lemon juice to add brightness before serving.
