Description

These Garlic Parmesan Chicken Kebabs are flavorful, juicy, and easy-to-make skewers perfect for grilling. Marinated with a blend of Parmesan cheese, garlic, herbs, and spices, these kebabs offer a delightful combination of savory and tangy flavors, ideal for a summer cookout or a quick weeknight dinner.

Ingredients

Scale

Chicken

  • 2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes

Marinade

  • 1/4 cup grated Parmesan cheese
  • 1/4 cup white vinegar
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon lemon juice
  • 2 teaspoons garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon onion powder
  • 1/2 teaspoon crushed red pepper flakes
  • Salt and pepper to taste

Instructions

  1. Cut Chicken: Cut each piece of chicken breast into 1-inch cubes to ensure even cooking and easy threading onto the skewers.
  2. Thread Chicken: Thread the chicken cubes evenly onto skewers, packing them close but leaving some space for heat circulation so that they cook uniformly.
  3. Prepare Marinade: In a medium bowl, whisk together grated Parmesan cheese, white vinegar, extra-virgin olive oil, lemon juice, garlic powder, dried oregano, onion powder, crushed red pepper flakes, and salt and pepper until well combined.
  4. Marinate: Thoroughly baste the chicken kebabs with the prepared marinade, ensuring all sides are coated. Cover and refrigerate for at least 30 minutes and up to 12 hours to allow the flavors to infuse the chicken.
  5. Preheat Grill: Preheat your grill to medium heat. If using wooden skewers, soak them in water for at least 30 minutes beforehand to prevent burning.
  6. Grill Chicken: Place the marinated chicken kebabs on the grill, cooking for about 10 minutes total. Turn once halfway through grilling to get even cooking and slight char marks. Grill until the internal temperature reaches 165°F (75°C) and chicken is tender and cooked through.

Notes

  • Soak wooden skewers in water for at least 30 minutes before grilling to prevent them from burning.
  • Marinating overnight enhances the flavor significantly but at least 30 minutes is needed for the marinade to penetrate.
  • Ensure chicken pieces are evenly sized for uniform cooking.
  • Use a meat thermometer to check that the chicken reaches 165°F for safety.
  • You can substitute chicken thighs for a juicier result if desired.
