Description

These delightful French Toast Cups are a fun and easy twist on classic French toast, featuring thick slices of brioche or challah bread pressed into muffin tins and baked with a rich custard mixture. Perfectly golden and crispy on the edges, yet soft and custardy inside, they make a delicious breakfast or brunch treat.

Ingredients

Scale

For the French Toast Cups

  • 8 thick slices of brioche or challah bread
  • 3 large eggs
  • 1 cup milk or cream
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons sugar or maple syrup
  • Butter for greasing the muffin tin

Instructions

  1. Prepare your muffin tin: Generously butter the muffin cups to prevent sticking and to give the French Toast Cups crispy, golden edges.
  2. Cut and press the bread: Trim the crusts off your bread slices if desired, then press each piece into the muffin tin cups, forming little bread bowls that will hold the custard.
  3. Mix the custard: In a bowl, whisk together the eggs, milk or cream, vanilla extract, ground cinnamon, ground nutmeg, and sugar or maple syrup until the mixture is smooth and fragrant.
  4. Assemble and soak: Pour the custard mixture evenly into each bread cup, making sure the bread soaks well but is not overly soggy.
  5. Bake: Place the muffin tin in a preheated oven at 350°F (175°C) and bake for 20-25 minutes until the custard is set and the tops are golden brown.
  6. Cool and serve: Allow the French Toast Cups to cool slightly before gently removing them from the tin to keep their shape intact, then serve warm and enjoy.

Notes

  • You can use either milk or cream depending on your preference for richness.
  • Optional toppings include fresh berries, powdered sugar, maple syrup, or whipped cream.
  • Trimming the crusts is optional but helps create neater cups.
  • Be careful not to over-soak the bread, or the cups may become soggy.
  • These cups can be made ahead and reheated in the oven or microwave.
