Instructions

  2. Heat the liquids: In a saucepan, combine the lemonade, elderflower cordial, lemon zest, and lemon juice. Warm the mixture over medium heat until just warm, ensuring it does not boil which could affect gelatin setting.
  3. Dissolve the gelatin: Remove the saucepan from heat and stir in the bloomed gelatin until it is fully dissolved, ensuring a smooth mixture without any lumps.
  4. Add the mint leaves: Stir in the chopped fresh mint leaves to infuse their flavor throughout the jelly mixture.
  5. Pour into molds: Transfer the mixture into a mold or individual serving cups, preparing them for setting.
  6. Chill to set: Refrigerate the jelly for at least 4 hours or until firm and fully set.
  7. Serve and garnish: Carefully remove the jelly from the mold or serve directly in cups. Garnish with fresh mint sprigs before serving for added aroma and visual appeal.
