Instructions
- Bloom the gelatin: In a small bowl, sprinkle the gelatin powder over the cold water and let it sit for about 5 minutes until it blooms and becomes spongy.
- Heat the liquids: In a saucepan, combine the lemonade, elderflower cordial, lemon zest, and lemon juice. Warm the mixture over medium heat until just warm, ensuring it does not boil which could affect gelatin setting.
- Dissolve the gelatin: Remove the saucepan from heat and stir in the bloomed gelatin until it is fully dissolved, ensuring a smooth mixture without any lumps.
- Add the mint leaves: Stir in the chopped fresh mint leaves to infuse their flavor throughout the jelly mixture.
- Pour into molds: Transfer the mixture into a mold or individual serving cups, preparing them for setting.
- Chill to set: Refrigerate the jelly for at least 4 hours or until firm and fully set.
