Morel Mushrooms

  • 12 large fresh morel mushrooms, cleaned and halved lengthwise

Crab Stuffing

  • 8 ounces lump crab meat, picked over for shells
  • 3 tablespoons cream cheese, softened
  • 2 tablespoons mayonnaise
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons breadcrumbs
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon lemon juice
  • 1/2 teaspoon Old Bay seasoning
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt

For Baking

  • 1 tablespoon olive oil
  • 1 tablespoon melted butter


Instructions

  1. Preheat Oven: Set your oven to 375 degrees Fahrenheit to prepare for baking the stuffed mushrooms.
  2. Prepare Morels: Gently clean the morel mushrooms to remove any dirt or grit and pat them dry. Halve them lengthwise if not already done.
  3. Make Crab Filling: In a mixing bowl, combine the lump crab meat, softened cream cheese, mayonnaise, Parmesan cheese, breadcrumbs, chopped parsley, lemon juice, Old Bay seasoning, garlic powder, salt, and black pepper. Mix carefully to keep the crab meat chunky and well incorporated.
  4. Brush Mushrooms: Lightly brush both sides of the morel halves with olive oil to enhance flavor and prevent drying during baking.
  5. Stuff Mushrooms: Place the oiled morels on a baking sheet and carefully spoon the crab mixture into each mushroom cavity, pressing gently to fill each one evenly.
