Aioli Base

- ½ teaspoon sea salt (to taste)

- ¾ cup avocado oil (or olive/neutral oil)
Instructions
- Combine Ingredients: Add the egg, lime juice, minced garlic, Dijon mustard, chipotle chile in adobo, smoked paprika, and sea salt into a blender container.
- Blend Base: Blend on low speed until all ingredients are well combined and smooth.
- Emulsify Oil: With the blender running on low speed (around speed 3–5), slowly drizzle the avocado oil into the mixture. Pour gradually to allow the aioli to emulsify and thicken properly.
- Finish Emulsion: Continue adding the oil slowly, blending continuously until the entire oil is incorporated and the aioli has reached a thick, creamy consistency.
- Adjust Seasoning: Taste the aioli and adjust salt or chipotle level as needed to suit your preference.
- Serve or Store: Serve the chipotle aioli immediately, or refrigerate it in an airtight container for up to 4 days.
