Aioli Base

  • 1 egg (room temperature)
  • 2 tablespoons freshly squeezed lime juice
  • 1 clove garlic, minced

  • 1 teaspoon smoked paprika
  • ½ teaspoon sea salt (to taste)

  • ¾ cup avocado oil (or olive/neutral oil)


Instructions

  1. Combine Ingredients: Add the egg, lime juice, minced garlic, Dijon mustard, chipotle chile in adobo, smoked paprika, and sea salt into a blender container.
  2. Blend Base: Blend on low speed until all ingredients are well combined and smooth.
  3. Emulsify Oil: With the blender running on low speed (around speed 3–5), slowly drizzle the avocado oil into the mixture. Pour gradually to allow the aioli to emulsify and thicken properly.
  4. Finish Emulsion: Continue adding the oil slowly, blending continuously until the entire oil is incorporated and the aioli has reached a thick, creamy consistency.
  5. Adjust Seasoning: Taste the aioli and adjust salt or chipotle level as needed to suit your preference.
  6. Serve or Store: Serve the chipotle aioli immediately, or refrigerate it in an airtight container for up to 4 days.
