Ingredients
Scale
Dry Ingredients
- 2 cups granulated sugar
- 1 teaspoon vanilla extract
- 1 (3.9 oz) package Instant White Chocolate Pudding Mix (dry)
- 3/4 cup White Hot Chocolate Powder Mix
- 4 cups 1-Minute Oatmeal
Wet Ingredients
- 3/4 cup salted butter
- 2/3 cup whole milk
Toppings
- 1 cup mini dehydrated marshmallows, divided
- Sprinkles, for garnish
Instructions
- Heat the base mixture: In a large pot over medium-high heat, combine the butter, milk, and granulated sugar. Stir occasionally and bring the mixture to a rolling boil. Once boiling, maintain the boil for exactly 1 minute and 45 seconds to ensure proper consistency.
- Mix in remaining ingredients: Remove the pot from heat. Immediately stir in the vanilla extract, dry instant white chocolate pudding mix, white hot chocolate powder mix, and oats. Also, fold in 3/4 cup of the mini dehydrated marshmallows, mixing until everything is fully incorporated.
- Form cookies and decorate: Using a large spoon, drop generous spoonfuls of the mixture onto sheets of wax paper. While still warm, sprinkle the cookies with the remaining mini marshmallows and decorative sprinkles. Allow the cookies to cool at room temperature until they harden and set, which may take about 15-20 minutes.
Notes
- Use 1-Minute Oatmeal for the best texture and quick cooking.
- If you can’t find white hot chocolate powder mix, substitute with any white chocolate drink powder.
- Mini dehydrated marshmallows are typically found in the cocoa or hot chocolate section of grocery stores.
- These cookies do not require refrigeration and should be stored in an airtight container at room temperature.
- For a gluten-free option, ensure the oats are certified gluten-free.
