Description

These Savory French Dip Tortilla Rollups are an easy and delicious appetizer featuring thinly sliced roast beef, sautéed onions and bell peppers, Swiss cheese, and horseradish sauce, all rolled inside soft flour tortillas. Toasted to a golden brown and served with warm beef broth dipping sauce, they offer a flavorful twist on the classic French dip sandwich in a convenient bite-sized form.

Rollup Ingredients

  • 4 large flour tortillas
  • 8 oz thinly sliced roast beef
  • 4 slices Swiss cheese
  • 1/4 cup horseradish sauce
  • 1/2 cup sautéed onions
  • 1/2 cup sautéed bell peppers
  • 1 tbsp butter or oil (for toasting)

For Dipping Sauce

  • 1 1/2 cups beef broth
  • 1 tsp Worcestershire sauce (optional)


Instructions

  1. Sauté Vegetables: In a skillet over medium heat, sauté thinly sliced onions and bell peppers until soft and caramelized, about 5-7 minutes. Remove from heat and set aside.
  2. Assemble Rollups: Lay a flour tortilla flat on a clean surface. Spread a thin layer of horseradish sauce evenly over the tortilla. Layer roast beef, sautéed onions, sautéed bell peppers, and top with a slice of Swiss cheese.
  3. Roll Tortillas: Starting from one end, tightly roll the tortilla around the filling, tucking in the sides as you go to keep the filling secure. Repeat with remaining tortillas and fillings.
  4. Toast Rollups: Heat butter or oil in the same skillet over medium heat. Place the rollups seam-side down in the skillet and toast until golden brown, about 2-3 minutes per side. Remove from skillet.
  5. Heat Dipping Broth: In a small saucepan over medium heat, warm the beef broth until it is just simmering. Stir in Worcestershire sauce if using for added flavor.
  6. Serve: Slice each toasted rollup into bite-sized pieces. Arrange on a platter with a small bowl of warm dipping broth in the center for dipping. Enjoy immediately.
