Description

Indulge in these rich chocolate truffles made with smooth dark chocolate, creamy butter, and heavy cream. Carefully handcrafted and coated with a variety of toppings like desiccated coconut, cocoa powder, crushed peanuts, and colorful sprinkles, these truffles offer a decadent treat that’s perfect for gifting or enjoying at home. With no cooking required, they are easy to prepare and deliver luxurious chocolate flavor in every bite.

Ingredients

Scale

Truffle Base

  • 10 oz dark chocolate, chopped into small pieces for even melting
  • 2 tbsp unsalted butter (preferably Kerrygold for richness)
  • 1/2 cup heavy cream, cold for proper emulsification

Coatings

  • 1/4 cup powdered sugar (optional, for sweetness and coating)
  • 1/2 cup desiccated coconut
  • 1/3 cup sprinkles
  • 1/4 cup unsweetened cocoa powder, sifted to remove lumps
  • 1/2 cup crushed peanuts, finely crushed for better coating

Instructions

  1. Melt the Chocolate and Butter: Place the chopped dark chocolate and unsalted butter in a heatproof bowl. Set the bowl over a pot of simmering water (double boiler) and gently stir until completely melted and smooth.
  2. Prepare the Cream: Remove the bowl from heat and add the cold heavy cream gradually, stirring continuously to achieve a shiny, emulsified ganache.
  3. Chill the Mixture: Cover the ganache with plastic wrap and refrigerate for at least 2 hours or until firm enough to shape.
  4. Shape the Truffles: Using a small spoon or melon baller, scoop out small portions of the chilled ganache and roll them between your palms to form smooth balls.
  5. Coat the Truffles: Roll each truffle in your choice of coatings including powdered sugar, desiccated coconut, sprinkles, sifted cocoa powder, or crushed peanuts to create a variety of flavored finishes.
  6. Final Chill: Place the coated truffles on a lined tray and refrigerate for another 30 minutes to firm up before serving.

Notes

  • Use high-quality dark chocolate for the best flavor and texture.
  • Make sure the heavy cream is cold to help emulsify the ganache properly.
  • The optional powdered sugar coating adds a subtle sweetness and texture variation.
  • Store truffles refrigerated in an airtight container for up to one week.
  • Let truffles sit at room temperature for 10 minutes before eating to soften.
