- Prepare the cucumber: Wash the cucumber thoroughly and pat it dry with a clean towel to remove excess moisture.
- Slice cucumber strips: Using a knife or mandolin, slice the cucumber lengthwise into thin, long strips about 1/8-inch thick, making sure the slices are wide enough to wrap.
- Make the filling: In a bowl, combine cottage cheese, freshly chopped dill, lemon juice, and a pinch of salt and pepper. Stir well until the mixture is evenly blended.
- Assemble the wraps: Place about 1 tablespoon of the cottage cheese mixture on the wide end of each cucumber strip. Carefully roll the cucumber from the spread end into a tight wrap.
- Secure and chill: If needed, secure each wrap with a toothpick to hold its shape. Serve immediately or chill for 10 to 15 minutes to enhance flavors before serving.
