Description

Delight in these Mini Chocolate Lava Cakes, featuring a rich, molten chocolate center surrounded by a tender cake exterior. This recipe combines simple ingredients to create an indulgent dessert perfect for any occasion.

Ingredients

Scale

For the Lava Cakes

  • ½ cup unsalted butter
  • 1 cup semi-sweet chocolate chips
  • 2 large eggs
  • 2 large egg yolks
  • ⅓ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ¼ cup all-purpose flour
  • ¼ teaspoon salt

Optional

  • Powdered sugar for dusting

Instructions

  1. Melt butter and chocolate: In a microwave-safe bowl, combine the unsalted butter and semi-sweet chocolate chips. Microwave in 20-second intervals, stirring after each, until completely melted and smooth. Set aside to cool slightly.
  2. Whisk eggs, yolks, sugar, and vanilla: In a large bowl, vigorously whisk together the eggs, egg yolks, granulated sugar, and vanilla extract until the mixture is pale and slightly thickened.
  3. Combine chocolate mixture with eggs: Slowly pour the melted chocolate and butter mixture into the egg mixture, stirring constantly to prevent the eggs from cooking.
  4. Add dry ingredients: Sift the all-purpose flour and salt into the chocolate batter and gently fold in until just combined. Be careful not to overmix to keep the batter light.
  5. Prepare molds and pour batter: Grease your mini cake molds or ramekins with butter or non-stick spray. Evenly divide the batter among the molds, filling each about ¾ full.
  6. Bake the lava cakes: Preheat your oven to 425°F (220°C). Place the molds on a baking sheet and bake for 12-14 minutes. The edges should be set, but the center still soft and jiggly.
  7. Cool and serve: Remove the cakes from the oven and let them cool in the molds for 1-2 minutes. Run a knife around the edges to loosen, then carefully invert onto serving plates. Dust with powdered sugar if desired and serve immediately for the best molten center experience.

Notes

  • Use high-quality chocolate for the best flavor.
  • Do not overbake to maintain the molten center.
  • If you do not have ramekins, silicone muffin trays can also be used.
  • For easy cleanup, line the baking sheet with parchment paper.
  • Serve with fresh berries or a scoop of vanilla ice cream to enhance the dessert.
