Ingredients
Scale
Chicken Marinade
- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Zest and juice of 2 limes
- 2 tablespoons honey
- 2 cloves garlic, minced
- 1/2 teaspoon ground cumin
- Salt and black pepper, to taste
Rice and Toppings
- 2 cups cooked white or jasmine rice
- 2 ripe avocados, diced
- 1 tablespoon fresh cilantro, chopped
- 1/2 cup cherry tomatoes, finely chopped (optional)
Instructions
- Prepare Marinade: In a bowl, whisk together olive oil, lime zest, lime juice, honey, garlic, cumin, salt, and black pepper to create the flavorful marinade for the chicken.
- Marinate Chicken: Coat the chicken breasts evenly with the marinade and let them sit for at least 20 minutes to absorb the flavors fully.
- Preheat Skillet: Heat a skillet or grill pan over medium-high heat to get it ready for cooking the chicken.
- Cook Chicken: Place the marinated chicken breasts in the hot skillet and cook for 5–6 minutes on each side until golden brown and fully cooked through.
- Rest and Slice Chicken: Remove the chicken from heat and allow it to rest briefly before slicing into strips. This helps retain the juices.
- Prepare Avocado Mixture: In a small bowl, gently toss the diced avocado with a pinch of salt and the chopped cilantro to add freshness and flavor.
- Layer Rice: On each serving plate or inside a ring mold, layer the cooked rice as the base of the stack.
- Add Chicken and Avocado: Top the rice layer with sliced chicken strips, then add the avocado mixture over the chicken.
- Finish and Serve: If using, sprinkle finely chopped cherry tomatoes on top and drizzle with any remaining honey-lime marinade juices for an extra burst of flavor.
Notes
- Marinating the chicken longer than 20 minutes, up to 2 hours, will enhance the flavor even more.
- For a spicier kick, add a pinch of chili flakes to the marinade.
- Use jasmine rice for a more aromatic and fluffy texture.
- Cherry tomatoes are optional but add a nice freshness and color to the dish.
- Make sure to let the chicken rest after cooking to keep it juicy when sliced.
