Description

Delicious and nutritious High Protein Egg Bites packed with eggs, Greek yogurt, cottage cheese, and fresh vegetables, perfect for a healthy breakfast or snack. These savory bites are baked to golden perfection and can be customized with bacon or turkey sausage for extra flavor.

Ingredients

Scale

Egg Mixture

  • 6 large eggs
  • 1/2 cup plain Greek yogurt
  • 1/2 cup cottage cheese

Vegetables and Cheese

  • 1/2 cup shredded cheddar cheese
  • 1/3 cup chopped spinach
  • 1/4 cup diced bell pepper

Seasonings and Optional Protein

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup cooked bacon or turkey sausage (optional)

Instructions

  1. Preheat the Oven: Preheat your oven to 350ยฐF (175ยฐC). Lightly grease a 12-cup muffin tin or line with silicone molds to prevent sticking.
  2. Blend the Base: In a blender, combine the eggs, plain Greek yogurt, and cottage cheese. Blend until the mixture is smooth and frothy, ensuring a light texture for the egg bites.
  3. Mix in Add-ins: Pour the blended mixture into a large bowl. Gently stir in shredded cheddar cheese, chopped spinach, and diced bell pepper. Season the mixture evenly with salt and black pepper.
  4. Fill the Muffin Cups: Evenly distribute the mixture into the prepared muffin tin cups. If desired, add cooked bacon or turkey sausage pieces into each cup for extra protein and flavor.
  5. Bake: Bake in the preheated oven for 22 to 25 minutes until the centers are set and the tops are lightly golden brown. Once baked, let the egg bites cool in the pan for 5 minutes before carefully removing them.

Notes

  • You can substitute the cheddar cheese with any cheese of your choice, such as mozzarella or pepper jack.
  • For a vegetarian version, omit the bacon or turkey sausage.
  • These egg bites can be stored in an airtight container in the fridge for up to 4 days and reheated in the microwave.
  • To make the recipe dairy-free, use dairy-free yogurt and cheese alternatives.
  • If you prefer a smoother texture, blend the vegetables with the egg mixture instead of stirring them in.
