Description

This Greek Lemon Chicken recipe features juicy, bone-in chicken thighs marinated in a flavorful blend of lemon juice, olive oil, garlic, and herbs, then oven-roasted to tender perfection with crispy, golden skin. A simple yet delicious Mediterranean dish perfect for family dinners or entertaining guests.

Ingredients

Scale

Chicken

  • 8 bone-in, skin-on chicken thighs

Marinade

  • ⅓ cup extra-virgin olive oil
  • ¼ cup fresh lemon juice (about 2 lemons)
  • 4 garlic cloves, minced
  • 1 tablespoon dried oregano
  • 2 teaspoons dried thyme
  • 2 teaspoons Dijon mustard
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper

Instructions

  1. Make the Marinade: In a small bowl, whisk together olive oil, lemon juice, minced garlic, oregano, thyme, Dijon mustard, salt, and pepper until well combined, creating a bright and herbaceous marinade.
  2. Marinate the Chicken: Place the chicken thighs in a large bowl or a zip-top bag. Pour the marinade over the chicken, making sure every piece is evenly coated. Cover and refrigerate for 1 to 2 hours, or up to 8 hours for more flavorful meat.
  3. Preheat the Oven: Set your oven to 350°F (180°C) to prepare for slow roasting the chicken.
  4. Transfer to Baking Dish: Arrange the marinated chicken thighs skin side up in a baking dish, then pour any leftover marinade over the top to keep the chicken moist and flavorful while roasting.
  5. Bake the Chicken: Roast the chicken in the oven for 40 to 45 minutes until the internal temperature reaches 175°F (80°C). You may baste the chicken once or twice during cooking to enhance moisture and flavor.
  6. Optional – Broil for Crispiness: For extra crispy skin, switch the oven to broil in the last 2 to 3 minutes of cooking. Keep a close eye to prevent burning.
  7. Serve: Remove the chicken from the oven and let it rest for 5 minutes before serving. Garnish with lemon slices and chopped parsley for an attractive finish and fresh flavor.

Notes

  • Marinating the chicken longer will enhance the flavor and tenderness.
  • Use bone-in, skin-on thighs for the juiciest and most flavorful results.
  • Internal temperature should reach 175°F (80°C) for safe consumption and tender meat.
  • Can be served with Greek salad, roasted vegetables, or rice for a complete meal.
  • Leftovers can be stored in the refrigerator for up to 3 days.
