Description

Greek Chicken Souvlaki Bowls with Tahini Garlic Sauce offer a delicious and healthy Mediterranean-inspired meal combining tender grilled chicken marinated in lemon and herbs with fresh vegetables, fluffy rice or quinoa, and a creamy tahini garlic sauce. Perfect for a quick and flavorful weeknight dinner.

Ingredients

Scale

Chicken Marinade

  • 1 ½ pounds boneless, skinless chicken breast, cubed
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • ½ tsp paprika
  • Salt and black pepper, to taste

Bowl Components

  • 2 cups cooked rice or quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ¼ cup red onion, thinly sliced
  • ½ cup crumbled feta cheese
  • Fresh parsley, chopped (for garnish)

Tahini Garlic Sauce

  • ¼ cup tahini
  • 2 tbsp lemon juice
  • 1 clove garlic, finely minced
  • 24 tbsp warm water (to thin sauce)
  • Salt, to taste

Instructions

  1. Marinate the chicken: In a bowl, combine olive oil, lemon juice, minced garlic, dried oregano, paprika, salt, and black pepper. Add the cubed chicken and toss to coat completely. Cover and let it marinate for at least 20 minutes to infuse the flavors.
  2. Grill the chicken: Heat a grill pan or skillet over medium-high heat. Add the marinated chicken pieces and cook for 8–10 minutes, turning occasionally, until the chicken is fully cooked through and has a nice light char on the outside.
  3. Prepare tahini garlic sauce: In a small bowl, whisk together tahini, lemon juice, finely minced garlic, salt, and warm water until the sauce is smooth and creamy. Adjust water to reach desired consistency.
  4. Assemble the bowls: Divide the cooked rice or quinoa among four bowls. Top with the grilled chicken, halved cherry tomatoes, diced cucumber, and thinly sliced red onions.
  5. Add finishing touches: Drizzle each bowl generously with the prepared tahini garlic sauce. Sprinkle crumbled feta cheese and chopped fresh parsley over the top.
  6. Serve and enjoy: Serve the Greek Chicken Souvlaki Bowls warm for an irresistible and comforting meal.

Notes

  • Marinate chicken for longer (up to 2 hours) for deeper flavor.
  • Rice or quinoa can be substituted with couscous or cauliflower rice for variation.
  • Use fresh lemon juice for best flavor in both marinade and sauce.
  • If tahini sauce is too thick, add warm water gradually to achieve desired consistency.
  • Leftover bowls keep well refrigerated for up to 2 days but add fresh parsley and feta just before serving.
