Chicken Patty Mixture

- Zest of 1 lemon
- 1 egg, lightly beaten
- Salt and black pepper to taste

Instructions
- Combine Ingredients: In a large bowl, combine ground chicken, crumbled feta, breadcrumbs, grated onion, minced garlic, chopped parsley, chopped dill, lemon zest, beaten egg, salt, and pepper. Mix until just combined without overworking the mixture to keep the patties tender.
- Form Patties: Shape the mixture into 8 evenly sized patties, ensuring they are compact but not too dense to allow even cooking.
- Heat Oil: Heat the olive oil in a large skillet over medium heat until shimmering and hot but not smoking.
- Cook Patties: Place the patties in the skillet and cook for 5–6 minutes on each side or until they are golden brown on the outside and cooked through internally (internal temperature should reach 165°F or 74°C).
- Serve: Transfer the cooked patties to a plate, garnish with lemon wedges and fresh herbs, and serve immediately with Greek yogurt or tzatziki on the side for a zesty complement.
