- Prepare the Steak: Cut your room temperature ribeye into 1 to 1.5-inch cubes. Pat the cubes dry thoroughly to ensure a good sear. Season all sides with kosher salt and freshly ground black pepper to taste.
- Heat the Skillet: Preheat a cast iron skillet over medium-high heat. Add one tablespoon of avocado oil and let it heat until shimmering, which will help achieve a perfect sear on the steak bites.
- Sear the Steak Cubes: Place the steak cubes in the hot skillet in a single layer without overcrowding. Sear for about 1-2 minutes on each side until a brown crust forms, but the center remains pink and juicy.
- Add Butter and Sauce Ingredients: Reduce the heat slightly to medium. Add the unsalted butter to the skillet and let it melt.
