Description

This Easy Hamburger Stroganoff is a comforting and hearty dish featuring lean ground beef simmered with mushrooms, onions, and a creamy mushroom sauce, served over tender wide egg noodles. It’s a quick and satisfying meal ideal for weeknight dinners, combining rich flavors and simple ingredients in under 30 minutes.

Ingredients

Scale

Meat and Dairy

  • 1 1/2 pounds lean ground beef
  • 2 tablespoons butter
  • 1/2 cup sour cream

Vegetables

  • 1 medium onion, diced
  • 1 (8-ounce) package sliced mushrooms
  • 2 garlic cloves, minced

Pantry Items

  • 1 (14-ounce) can beef broth (about 1 1/2 cups)
  • 1 (.85 to 1-ounce) packet brown gravy mix
  • 1 (10.75-ounce) can condensed cream of mushroom soup
  • 1 (16-ounce) package wide egg noodles, prepared per the package instructions

Instructions

  1. Brown the ground beef: In a large skillet over medium-high heat, cook the ground beef until browned and no longer pink. Drain excess fat and set the beef aside on a plate.
  2. Sauté vegetables: Return the skillet to the stove and add the butter. Once melted, add diced onions and sliced mushrooms. Cook until the onions become translucent and the mushrooms begin to brown on the edges, about 5-7 minutes. Add minced garlic and cook for an additional 1 minute, stirring constantly to prevent burning.
  3. Prepare sauce and combine: In a small bowl, mix the beef broth with the brown gravy mix until combined. Pour this mixture into the skillet along with the undiluted can of cream of mushroom soup. Stir well to combine all ingredients.
  4. Add sour cream and beef: Stir in the sour cream and the cooked ground beef back into the skillet. Mix thoroughly to integrate all flavors.
  5. Simmer to thicken: Reduce the heat to low and let the sauce simmer gently for about 8 minutes, stirring occasionally, until the sauce has thickened to your desired consistency.
  6. Serve: Spoon the hot stroganoff over prepared wide egg noodles and enjoy immediately.

Notes

  • For a thicker sauce, let it simmer a few minutes longer or add a slurry of cornstarch and water.
  • You can substitute ground turkey or chicken for a leaner option.
  • If you prefer extra vegetables, add diced bell peppers or peas during the sautéing step.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently on the stovetop or microwave, adding a splash of broth to loosen if needed.
