Instructions

  1. Prepare the cake pans: Preheat your oven to 350°F (175°C). Grease and flour three 8-inch round cake pans or line them with parchment paper to prevent sticking.
  2. Mix dry ingredients: In a medium bowl, whisk together the all-purpose flour, baking powder, and salt until combined evenly.
  3. Beat butter and sugar: In a large bowl, use a mixer to beat the softened unsalted butter and granulated sugar until the mixture becomes light and fluffy, about 2 to 3 minutes.
  4. Add egg whites and flavorings: Add the egg whites one at a time to the butter mixture, beating well after each addition. Then mix in the cotton candy flavoring and vanilla extract to infuse the batter with flavor.
  5. Combine wet and dry mixtures: Alternately add the dry ingredients and whole milk to the butter mixture, beginning and ending with the dry ingredients. Mix gently until just combined to avoid overmixing.
  6. Color the batter: Divide the batter evenly into two separate bowls. Tint one portion pink using gel food coloring and the other portion blue. Spoon dollops of each colored batter randomly into the prepared pans.
