- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 4 cups fresh spinach, chopped (or 1 1/2 cups thawed frozen spinach, squeezed dry)
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/8 teaspoon nutmeg (optional)
- 1 cup crumbled feta cheese
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper to prepare for baking.
- Sauté Onion and Garlic: Heat olive oil in a skillet over medium heat. Add the finely chopped onion and sauté for 3–4 minutes until softened. Stir in the minced garlic and cook for an additional minute to release its aroma.
- Cook Spinach: Add the chopped fresh spinach to the skillet and cook for 2–3 minutes until wilted. If using thawed frozen spinach, skip this cooking step. Remove the skillet from heat and allow the spinach mixture to cool slightly.
- Combine Filling: In a mixing bowl, combine the cooked spinach mixture with dried oregano, salt, black pepper, optional nutmeg, and crumbled feta cheese. Stir well until the filling ingredients are fully integrated.
- Prepare Puff Pastry: Unroll the thawed puff pastry sheet onto a lightly floured surface. Evenly spread the spinach and feta filling over the pastry, leaving a 1/2-inch border around the edges for sealing.
- Roll and Slice: Starting from one long side, carefully roll the pastry into a tight log. Using a sharp knife, slice the rolled log into 1-inch thick rolls. Place each roll cut-side up on the prepared baking sheet, spaced apart.
- Apply Egg Wash and Seeds: Brush the tops of each roll with the beaten egg to achieve a glossy finish. If desired, sprinkle sesame seeds or poppy seeds on top for extra texture and flavor.
- Bake: Bake the rolls for 18–22 minutes, or until they are puffed up and a golden brown color. Remove from the oven and let cool slightly before serving.
