Description

A fresh and flavorful Cucumber and Avocado Sandwich featuring herbed goat cheese, crisp romaine lettuce, and crunchy alfalfa sprouts on whole grain bread. This healthy, no-cook sandwich is perfect for a quick lunch or light meal.

Ingredients

Scale

Bread & Cheese

  • 4 slices Daveโ€™s Killer Bread 21 Whole Grains and Seeds
  • 4 ounces herbed goat cheese, at room temperature

Vegetables & Toppings

  • 2 Romaine lettuce leaves, washed and dried
  • ยฝ large cucumber, peeled and sliced
  • 1 large avocado, peeled, pitted, and sliced
  • Squeeze of fresh lemon juice
  • ยฝ cup alfalfa sprouts
  • Salt and black pepper to taste

Instructions

  1. Spread Goat Cheese: Spread the herbed goat cheese evenly on one side of each slice of the bread to create a smooth, flavorful base for the sandwich fillings.
  2. Layer Vegetables: On one slice of bread, layer the romaine lettuce leaves, followed by the sliced cucumber and avocado. Drizzle fresh lemon juice over the cucumber and avocado to enhance flavor and prevent browning.
  3. Add Sprouts and Season: Sprinkle the alfalfa sprouts on top of the avocado layer, then season with salt and freshly ground black pepper according to taste.
  4. Assemble Sandwich: Place another slice of bread, goat cheese side down, on top of the fillings to form a sandwich. Press gently to hold everything together.
  5. Repeat and Serve: Repeat these steps for the second sandwich. Serve immediately for the best texture and flavor.

Notes

  • Use ripe avocado for a creamy texture and best flavor.
  • For added crunch, consider toasting the bread lightly before assembling.
  • Feel free to substitute the goat cheese with a vegan cheese alternative for a dairy-free option.
  • Adding a few slices of tomato can boost freshness even more.
  • Consume immediately to prevent the bread from becoming soggy.
