Ingredients
Scale
Onion Rings
- 2 large yellow or sweet onions
Filling
- 8 oz cream cheese, softened
- 1 cup shredded sharp cheddar cheese
- 1–2 jalapeños, finely diced (seeded for milder heat)
- ¼ cup bacon bits (optional)
- ½ tsp garlic powder (optional)
- 2 tbsp chopped scallions (optional)
Breading and Frying
- ½ cup all-purpose flour
- 2 eggs, beaten
- 1½ cups seasoned breadcrumbs or panko
- Oil for frying (vegetable or canola)
Instructions
- Prepare Onion Rings: Slice the onions into ½-inch thick rings and carefully separate the rings from each other, keeping them intact for stuffing.
- Make Filling: In a medium bowl, combine the softened cream cheese, shredded sharp cheddar, finely diced jalapeños, bacon bits (if using), garlic powder, and chopped scallions. Mix well and chill the filling in the refrigerator to firm up.
- Stuff Onion Rings: Generously spoon or pipe the chilled jalapeño cream cheese mixture into each onion ring, filling the center evenly without overflowing.
- Freeze Stuffed Rings: Arrange the stuffed onion rings on a parchment-lined baking sheet and freeze for 20–30 minutes to help the filling set and prevent it from melting while frying.
- Bread the Rings: Prepare three shallow dishes: one with flour, one with beaten eggs, and one with seasoned breadcrumbs or panko. Dredge each stuffed onion ring first in flour, then dip into the beaten eggs, and finally coat thoroughly with the breadcrumbs to ensure an even, crispy crust.
- Heat Oil for Frying: Heat oil in a deep skillet or heavy pan to 350°F (175°C). Use enough oil to fully submerge the rings for even cooking.
- Fry Onion Rings: Fry the breaded, stuffed onion rings in small batches for 2 to 3 minutes on each side, or until golden brown and crispy. Avoid overcrowding to maintain oil temperature.
- Drain and Serve: Remove the fried onion rings with a slotted spoon and drain on paper towels to remove excess oil. Serve hot with your favorite dipping sauces.
Notes
- Seed jalapeños for milder heat or leave seeds to increase spiciness.
- Freezing the stuffed rings before frying helps the filling stay intact and reduces mess.
- Use seasoned breadcrumbs for extra flavor or plain breadcrumbs with added seasoning of your choice.
- Maintain oil temperature between 350°F to 360°F for perfectly crispy rings.
- Serve immediately for best texture; leftovers can be reheated but may lose some crispness.
