Ingredients
Scale
Rice Paper Rolls
- 8 rice paper wrappers
- 1 cup rice noodles, cooked and cooled
- 1 cup mixed vegetables (such as carrots, bell peppers, and cucumbers), thinly sliced
- 1/4 cup fresh herbs (mint and cilantro), chopped
- 2 tablespoons soy sauce or tamari
- 1-2 tablespoons oil for brushing or spraying (vegetable or canola oil recommended)
Instructions
- Cook the Rice Noodles: Prepare the rice noodles according to the package instructions, then drain and set aside to cool completely.
- Prepare Vegetables: Thinly slice your preferred vegetables such as carrots, bell peppers, and cucumbers into matchstick-sized pieces suitable for rolling.
- Soften Rice Paper: Submerge each rice paper wrapper in warm water for 10-15 seconds or until soft and pliable, then lay flat on a clean plate.
- Assemble Rolls: Place a small portion of cooled rice noodles and sliced vegetables in the center of the softened rice paper. Add fresh herbs and drizzle with soy sauce or tamari for flavor.
- Roll Up: Fold the sides of the rice paper over the filling, then roll from the bottom tightly, similar to a burrito, to enclose the filling completely.
- Preheat Air Fryer: Set your air fryer to 375°F (190°C) and allow it to preheat for a few minutes.
- Prepare Rolls for Air Frying: Lightly brush or spray the rolls with oil to ensure a crispy golden texture once cooked.
- Air Fry the Rolls: Place the rolls in a single layer in the air fryer basket. Cook for 8-10 minutes, turning halfway through, until the rolls are crispy and golden brown.
- Serve: Remove from air fryer and serve immediately with your favorite dipping sauce such as sweet chili or peanut sauce.
Notes
- Ensure not to over-soak the rice paper wrappers; they should be pliable but not too soft to prevent tearing.
- You can customize the vegetable fillings to your liking or seasonal availability.
- For extra flavor, add finely chopped garlic or ginger to the filling mixture.
- Use neutral oil for brushing to keep the flavor balanced.
- Cook the rolls in batches if your air fryer basket is small to avoid overcrowding.
- Serve immediately for best crispness as rice paper rolls can lose their crunch if left to sit.
