Ingredients
Scale
Shrimp and Sauce
- 1 lb (450g) large shrimp, peeled & deveined
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 2 tbsp butter (for sauce)
- 1 cup heavy cream (for sauce)
- ½ cup chicken broth
- ¼ cup grated Parmesan cheese
- Salt & pepper, to taste
- Fresh parsley, chopped (for garnish)
Mashed Potatoes
- 4 large potatoes, peeled & chunked
- 2 tbsp butter (for mashed potatoes)
- ½ cup heavy cream (for mashed potatoes)
- ¼ cup milk (for mashed potatoes)
- Salt & pepper, to taste
Instructions
- Boil Potatoes: Place the peeled and chunked potatoes into a large pot of salted water. Boil them for about 15 minutes or until they are fork-tender, indicating they are fully cooked and ready to be mashed.
- Mash Potatoes: Drain the boiled potatoes and return them to the pot. Add 2 tablespoons of butter, ½ cup heavy cream, and ¼ cup milk. Mash everything together until the potatoes are smooth and creamy. Season with salt and pepper to your taste, then cover and keep warm while preparing the shrimp.
- Cook Shrimp: Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the shrimp and cook for 2 to 3 minutes on each side, just until they turn pink and are cooked through. Remove the shrimp from the skillet and set aside to prevent overcooking.
- Sauté Garlic: In the same skillet, melt the remaining 2 tablespoons of butter. Add the minced garlic and sauté it for about 1 minute until fragrant but not browned, which will enhance the sauce’s flavor.
- Make Cream Sauce: Pour in 1 cup of heavy cream and ½ cup chicken broth into the skillet with the garlic. Bring this mixture to a gentle simmer and let it cook for 3 to 4 minutes to thicken slightly and develop flavor.
- Add Parmesan Cheese: Stir in ¼ cup grated Parmesan cheese into the simmering cream sauce until it melts completely and the sauce becomes smooth and creamy.
- Combine Shrimp and Sauce: Return the cooked shrimp to the skillet, tossing them in the creamy garlic sauce to ensure they are well coated and heated through for an additional minute.
- Serve: Plate a generous portion of the creamy mashed potatoes and top them with the garlic shrimp coated in sauce. Garnish with freshly chopped parsley for a pop of color and fresh flavor. Serve immediately for the best taste.
Notes
- Feel free to adjust the garlic amount based on your preference for a milder or stronger garlic flavor.
- Use fresh Parmesan cheese for best melting and flavor results.
- For a lighter version, consider substituting heavy cream with half-and-half or a dairy alternative, though the sauce will be less rich.
- This dish pairs beautifully with a crisp green salad or steamed vegetables to balance the richness.
- Make sure not to overcook the shrimp to keep them tender and juicy.
