Description

This Creamy Garlic Shrimp Over Mashed Potatoes recipe combines tender, succulent shrimp in a luscious garlic Parmesan cream sauce, served atop smooth, buttery mashed potatoes. Perfect for a satisfying dinner, this dish blends rich flavors and comforting textures, making it a crowd-pleaser for any occasion.

Ingredients

Scale

Shrimp and Sauce

  • 1 lb (450g) large shrimp, peeled & deveined
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 2 tbsp butter (for sauce)
  • 1 cup heavy cream (for sauce)
  • ½ cup chicken broth
  • ¼ cup grated Parmesan cheese
  • Salt & pepper, to taste
  • Fresh parsley, chopped (for garnish)

Mashed Potatoes

  • 4 large potatoes, peeled & chunked
  • 2 tbsp butter (for mashed potatoes)
  • ½ cup heavy cream (for mashed potatoes)
  • ¼ cup milk (for mashed potatoes)
  • Salt & pepper, to taste

Instructions

  1. Boil Potatoes: Place the peeled and chunked potatoes into a large pot of salted water. Boil them for about 15 minutes or until they are fork-tender, indicating they are fully cooked and ready to be mashed.
  2. Mash Potatoes: Drain the boiled potatoes and return them to the pot. Add 2 tablespoons of butter, ½ cup heavy cream, and ¼ cup milk. Mash everything together until the potatoes are smooth and creamy. Season with salt and pepper to your taste, then cover and keep warm while preparing the shrimp.
  3. Cook Shrimp: Heat 2 tablespoons of olive oil in a skillet over medium heat. Add the shrimp and cook for 2 to 3 minutes on each side, just until they turn pink and are cooked through. Remove the shrimp from the skillet and set aside to prevent overcooking.
  4. Sauté Garlic: In the same skillet, melt the remaining 2 tablespoons of butter. Add the minced garlic and sauté it for about 1 minute until fragrant but not browned, which will enhance the sauce’s flavor.
  5. Make Cream Sauce: Pour in 1 cup of heavy cream and ½ cup chicken broth into the skillet with the garlic. Bring this mixture to a gentle simmer and let it cook for 3 to 4 minutes to thicken slightly and develop flavor.
  6. Add Parmesan Cheese: Stir in ¼ cup grated Parmesan cheese into the simmering cream sauce until it melts completely and the sauce becomes smooth and creamy.
  7. Combine Shrimp and Sauce: Return the cooked shrimp to the skillet, tossing them in the creamy garlic sauce to ensure they are well coated and heated through for an additional minute.
  8. Serve: Plate a generous portion of the creamy mashed potatoes and top them with the garlic shrimp coated in sauce. Garnish with freshly chopped parsley for a pop of color and fresh flavor. Serve immediately for the best taste.

Notes

  • Feel free to adjust the garlic amount based on your preference for a milder or stronger garlic flavor.
  • Use fresh Parmesan cheese for best melting and flavor results.
  • For a lighter version, consider substituting heavy cream with half-and-half or a dairy alternative, though the sauce will be less rich.
  • This dish pairs beautifully with a crisp green salad or steamed vegetables to balance the richness.
  • Make sure not to overcook the shrimp to keep them tender and juicy.
