Ingredients
Scale
Chicken and Pasta
- 2 cups cooked chicken (shredded or diced, rotisserie recommended)
- 12 oz pasta (penne, rotini, or preferred type)
Alfredo Sauce
- 2 tbsp butter
- 2 garlic cloves, minced
- 2 cups heavy cream
- 1 cup chicken broth
- 1 1/2 cups grated Parmesan cheese
- 1 1/2 cups shredded mozzarella cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder (optional)
- 1/4 tsp onion powder (optional)
Topping and Garnish
- 1/2 cup panko breadcrumbs (optional)
- Fresh parsley (optional)
Instructions
- Cook the pasta: Preheat the oven to 375°F (190°C). Cook the pasta according to package instructions until al dente, then drain and set aside.
- Prepare the Alfredo sauce: In a large saucepan, melt butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant, careful not to burn. Stir in heavy cream and chicken broth, then bring to a simmer and cook for 3-4 minutes to thicken slightly. Reduce heat to low and stir in Parmesan, mozzarella, salt, pepper, garlic powder, and onion powder. Continue stirring until the cheese melts and sauce is smooth. Adjust seasoning as needed.
- Combine chicken, pasta, and sauce: In a large bowl, mix the cooked pasta, shredded chicken, and Alfredo sauce until everything is evenly coated.
- Assemble the casserole: Transfer the pasta mixture to a greased 9×13-inch baking dish. Sprinkle panko breadcrumbs evenly over the top if using, and optionally add extra mozzarella cheese for a cheesier crust.
- Bake: Place the casserole in the preheated oven and bake for 20-25 minutes until the top is golden brown and bubbly.
- Serve: Let cool for a few minutes before serving. Garnish with fresh parsley if desired for color and freshness.
Notes
- Use rotisserie chicken for convenience and quick prep.
- Adding vegetables such as sautéed mushrooms, spinach, or broccoli can boost nutrition and flavor.
- For a spicy kick, include red pepper flakes in the sauce or jalapeño slices on top before baking.
- Try swapping mozzarella or Parmesan with Gruyère, Gouda, or cheddar for a unique twist.
- Serve with a side salad or garlic bread for a complete meal.
