Description

These Creamy Boursin Mashed Potatoes are a rich and flavorful side dish perfect for any meal. Made with tender russet potatoes cooked in chicken broth and blended with butter and Boursin Garlic and Fine Herbs cheese, they offer a smooth, herby, and indulgent flavor that elevates classic mashed potatoes.

Ingredients

Scale

Potatoes and Broth

  • 6 cups chicken broth (or water)
  • 3 pounds russet potatoes (cut into 1 inch cubes – skins on or off, your choice)

Mix-ins

  • ½ cup unsalted butter
  • 5.3 ounce Boursin Garlic and Fine Herbs Cheese
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Garnish (Optional)

  • 1 tablespoon chopped fresh chives

Instructions

  1. Boil Broth: Bring the chicken broth to a boil on the stove in a large stock pot, preparing the cooking liquid for the potatoes.
  2. Cook Potatoes: Add the cubed potatoes to the boiling broth and cook for 15 minutes or until the potatoes are fork tender, ensuring they are soft enough to mash.
  3. Reserve Broth: Remove ½ cup of the chicken broth from the pot and set it aside for later use in mashing.
  4. Drain and Combine: Drain the remaining broth from the potatoes, then return the potatoes to the pot or transfer them to a large mixing bowl. Add the reserved ½ cup chicken broth, butter, Boursin cheese, salt, and pepper to the potatoes.
  5. Mash Potatoes: Use a handheld potato masher or electric hand mixer to mash everything together until smooth, ensuring creamy, well-blended mashed potatoes.
  6. Garnish and Serve: Transfer the mashed potatoes to a serving bowl, and optionally garnish with chopped fresh chives for a fresh herbal note and attractive presentation.

Notes

  • You can leave the potato skins on for extra texture and nutrients or peel them based on your preference.
  • Using chicken broth instead of water adds more flavor to the potatoes, but water can be used for a lighter taste.
  • Boursin Garlic and Fine Herbs cheese is key for flavor – do not substitute unless looking for a different flavor profile.
  • If the mashed potatoes are too thick, add more broth gradually to reach desired consistency.
  • These mashed potatoes pair wonderfully with roasted meats, grilled vegetables, or as a comfort food side dish.
