- Preheat Oven: Preheat your oven to 200°C (400°F) on the fan setting. Line a baking tray with parchment paper or a silicone baking mat to prevent sticking and ensure even baking.
- Prepare Puff Pastry: Unroll the puff pastry sheet carefully. Brush the entire surface lightly with the whisked egg to help achieve a golden, glossy finish.
- Cut Puff Pastry: Slice the egg-washed pastry into roughly 40 small rectangles for easy handling and layering.
- Double the Pastry Layers: Stack two rectangles on top of each other to form double-thick pieces, making about 20 doubled rectangles. This creates a sturdier base that holds the toppings well.
- Bake the Pastry: Arrange the doubled rectangles spaced apart on the prepared baking tray. Bake in the preheated oven for around 10 minutes until puffed up and golden brown.
- Add Brie and Melt: Remove the tray from the oven. Gently place small slices of brie on top of each pastry puff. Return to the oven for 1–2 minutes, just long enough for the brie to melt and become gooey.
- Top with Cranberry and Thyme: Once out of the oven, immediately spoon a small amount of cranberry sauce onto each melted brie top. Finish by sprinkling fresh thyme leaves over each bite for a fresh herbal note.
