Ingredients
Scale
Brownie Batter
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking powder
- 1/2 cup mini chocolate chips
Cookie Dough Topping
- 1/2 cup unsalted butter, softened
- 1/3 cup packed brown sugar
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- 3/4 cup heat-treated all-purpose flour
- 1/4 teaspoon salt
- 1/2 cup mini chocolate chips
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and grease or line a mini muffin pan to prevent sticking.
- Make Brownie Batter: In a medium bowl, whisk together melted butter and granulated sugar until combined. Beat in eggs and vanilla extract until the mixture is smooth and creamy.
- Add Dry Ingredients: Stir in the cocoa powder, all-purpose flour, salt, and baking powder just until combined, being careful not to overmix. Fold in mini chocolate chips for bursts of chocolate in each bite.
- Fill Muffin Pan: Spoon brownie batter into the prepared mini muffin pan, filling each cup about two-thirds full to allow space for rising.
- Bake Brownies: Bake the brownies for 12 to 14 minutes until they are set but still slightly soft in the center. Remove from the oven and allow brownie bites to cool completely in the pan.
- Prepare Cookie Dough: Beat the softened butter and brown sugar in a mixing bowl until creamy and smooth. Mix in milk and vanilla extract until combined.
- Mix Cookie Dough Dry Ingredients: Add heat-treated flour and salt to the wet mixture and stir until smooth. Fold in mini chocolate chips evenly throughout the dough.
- Assemble Brownie Bites: Roll small balls of cookie dough roughly the size of the brownie tops. Press one cookie dough ball onto the top of each cooled brownie bite gently to adhere.
- Serve or Chill: Enjoy immediately for a soft texture, or chill briefly in the refrigerator to firm up the cookie dough topping before serving.
Notes
- Heat-treat the flour for the cookie dough by microwaving it for 1 minute, stirring halfway through, to make it safe to eat.
- Store brownie bites in the refrigerator for up to four days in an airtight container to maintain freshness.
- Use mini muffin pans for perfectly bite-sized treats.
- Make sure the eggs are at room temperature for smoother batter consistency.
