Ingredients
Scale
Chicken Burgers
- 1 ½ lb ground chicken meat (thighs preferred)
- 2 scallions, chopped
- 1 cup shredded cheese (Cheddar, Gouda, Provolone)
- ¼ cup mayo
- ½ tsp salt
- ½ tsp pepper
Avocado Corn Salsa
- 1 large avocado, sliced
- 1 ear of fresh corn, kernels removed
- â…› cup chopped fresh cilantro
- ½ tbsp olive oil
- ½ lime, juiced
- Salt and pepper to taste
Instructions
- Prepare the Chicken Mixture: In a medium bowl, combine the ground chicken meat with chopped scallions, shredded cheese, mayo, salt, and pepper. Mix everything thoroughly to ensure all ingredients are evenly distributed.
- Form Patties: Shape the chicken mixture into evenly sized burger patties, making sure they are compact but not too dense for even cooking.
- Grill the Patties: Preheat your grill to medium-high heat. Place the chicken patties on the grill and cook for about 5 minutes on each side or until the internal temperature reaches 165°F (74°C) and the patties are fully cooked and nicely charred.
- Prepare the Avocado Corn Salsa: Remove the kernels from the ear of corn and place them in a bowl. Add the sliced avocado, chopped cilantro, olive oil, lime juice, and season with salt and pepper. Gently toss the mixture to combine all the flavors without mashing the avocado.
- Assemble and Serve: Place the grilled chicken burgers on plates and spoon the fresh avocado corn salsa generously over the top of each burger. Serve immediately for a flavorful and refreshing meal.
Notes
- Using chicken thighs adds more juiciness and flavor compared to chicken breast.
- You can substitute the shredded cheese with your favorite type or omit for a dairy-free version.
- If you don’t have a grill, you can cook the patties in a skillet or oven at 375°F for about 15-20 minutes, flipping halfway.
- For extra zest, add a pinch of chili flakes to the avocado salsa.
- Leftover salsa can be served as a dip or topping for other dishes.
