Description

Delicious and juicy chicken burgers made with ground chicken thighs, mixed with melted cheese and scallions, grilled to perfection and topped with a fresh, creamy avocado corn salsa bursting with cilantro and lime flavors. This quick and easy recipe serves 8 and makes a flavorful, satisfying meal perfect for any casual gathering.

Ingredients

Scale

Chicken Burgers

  • 1 ½ lb ground chicken meat (thighs preferred)
  • 2 scallions, chopped
  • 1 cup shredded cheese (Cheddar, Gouda, Provolone)
  • ¼ cup mayo
  • ½ tsp salt
  • ½ tsp pepper

Avocado Corn Salsa

  • 1 large avocado, sliced
  • 1 ear of fresh corn, kernels removed
  • â…› cup chopped fresh cilantro
  • ½ tbsp olive oil
  • ½ lime, juiced
  • Salt and pepper to taste

Instructions

  1. Prepare the Chicken Mixture: In a medium bowl, combine the ground chicken meat with chopped scallions, shredded cheese, mayo, salt, and pepper. Mix everything thoroughly to ensure all ingredients are evenly distributed.
  2. Form Patties: Shape the chicken mixture into evenly sized burger patties, making sure they are compact but not too dense for even cooking.
  3. Grill the Patties: Preheat your grill to medium-high heat. Place the chicken patties on the grill and cook for about 5 minutes on each side or until the internal temperature reaches 165°F (74°C) and the patties are fully cooked and nicely charred.
  4. Prepare the Avocado Corn Salsa: Remove the kernels from the ear of corn and place them in a bowl. Add the sliced avocado, chopped cilantro, olive oil, lime juice, and season with salt and pepper. Gently toss the mixture to combine all the flavors without mashing the avocado.
  5. Assemble and Serve: Place the grilled chicken burgers on plates and spoon the fresh avocado corn salsa generously over the top of each burger. Serve immediately for a flavorful and refreshing meal.

Notes

  • Using chicken thighs adds more juiciness and flavor compared to chicken breast.
  • You can substitute the shredded cheese with your favorite type or omit for a dairy-free version.
  • If you don’t have a grill, you can cook the patties in a skillet or oven at 375°F for about 15-20 minutes, flipping halfway.
  • For extra zest, add a pinch of chili flakes to the avocado salsa.
  • Leftover salsa can be served as a dip or topping for other dishes.
