Description

This Cheesy Potato Burritos recipe is a comforting and delicious meal perfect for a quick family dinner. Featuring a savory blend of seasoned ground beef, crispy tater tots, and melted cheddar and Monterey Jack cheeses wrapped in warm flour tortillas, then baked with extra cheese on top for a gooey finish. Topped with creamy sour cream and smoky chipotle sauce, these burritos are sure to satisfy your cravings for hearty, cheesy goodness with a slight spicy kick.

Ingredients

Scale

Filling

  • 1 pound ground beef (or ground turkey or plant-based alternative)
  • 2 cups frozen tater tots
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • Salt and pepper, to taste
  • 1/2 cup sour cream (plus extra for serving)
  • 1/4 cup Taco Bell chipotle sauce, adjust to taste (plus extra for serving)

Assembly & Garnish

  • 6 large flour tortilla wraps
  • Optional: Diced tomatoes, chopped green onions, chopped cilantro for garnish

Instructions

  1. Prepare the Tater Tots: Preheat your oven according to the instructions on the tater tots packaging, then bake the tater tots until they are crispy and golden brown. Once cooked, set them aside to cool slightly.
  2. Cook and Season the Beef: Heat a skillet over medium heat and add the ground beef. Cook, stirring occasionally, until the beef is browned and cooked through. Season with salt and pepper to taste. Drain any excess grease from the skillet once the beef is cooked.
  3. Mix the Filling: In a large mixing bowl, combine the cooked ground beef, slightly crushed crispy tater tots, shredded cheddar cheese, and Monterey Jack cheese. Stir well until all ingredients are evenly mixed.
  4. Warm the Tortillas: Soften the flour tortillas by heating them briefly in a dry skillet or microwaving for 10-15 seconds. This step helps prevent the tortillas from cracking during assembly.
  5. Assemble the Burritos: Place a tortilla on a flat surface and spoon a generous amount of the filling mixture into the center. Add a drizzle of chipotle sauce and a dollop of sour cream on top of the filling.
  6. Fold the Burritos: Fold the sides of the tortilla over the filling, then fold up the bottom edge and roll tightly to enclose the filling securely.
  7. Bake with Cheese: Arrange the rolled burritos seam-side down in a baking dish. Sprinkle some extra shredded cheese over the top of each burrito. Bake in the oven for about 5-8 minutes, or until the cheese is melted and bubbly.
  8. Garnish and Serve: Remove the burritos from the oven and garnish with optional diced tomatoes, chopped green onions, and cilantro if desired. Serve immediately with extra sour cream and chipotle sauce on the side.

Notes

  • You can substitute ground beef with ground turkey or a plant-based meat alternative for a lighter or vegetarian option.
  • The chipotle sauce quantity can be adjusted depending on how much heat you prefer.
  • For extra crispiness, bake the stuffed burritos on a parchment-lined baking sheet instead of a dish.
  • Warm the tortillas just before assembling to avoid cracking during rolling.
  • This recipe is great for meal prep and can be refrigerated for up to 3 days or frozen for longer storage.
