Instructions
- Sauté the aromatics: Heat olive oil in a large pot over medium heat. Add the diced onion and minced garlic, cooking for 3 to 4 minutes until fragrant and translucent, which helps release their flavors into the soup base.
- Add vegetables: Stir in the cubed butternut squash, diced sweet potato, and chopped carrots with the sautéed onion and garlic, mixing well to combine all ingredients.
- Simmer: Pour in the vegetable broth, increase the heat until the mixture comes to a boil, then reduce to low heat. Allow the soup to simmer gently for 20 to 25 minutes, or until the vegetables are tender when pierced with a fork.
- Blend: Using an immersion blender directly in the pot, blend the soup until smooth and creamy. Alternatively, carefully transfer the hot soup to a regular blender in batches and blend until velvety without lumps.
- Finish: Return the blended soup to the pot if needed. Stir in the coconut milk, ground ginger, ground cumin, and season with salt and pepper to taste. Simmer the soup for another 3 to 5 minutes to let the flavors meld together.
- Serve: Ladle the soup into bowls and garnish with a drizzle of coconut milk or cream, fresh parsley or cilantro, and optional roasted pumpkin seeds or a swirl of Greek yogurt for added texture and flavor.
