Description

A quick and refreshing Avocado Tuna Salad combining creamy avocado, tangy lime, fresh cilantro, and savory albacore tuna with a zesty pico de gallo topping. Perfect for a light lunch or snack in just 10 minutes.

Ingredients

Scale

Salad Mixture

  • 5 ounces Albacore Tuna, drained
  • 1 tablespoon Mayonnaise
  • 1 tablespoon Fresh Cilantro, chopped
  • 1 tablespoon Lime Juice (from half a lime)
  • 1/8 teaspoon Salt (or to taste)

Avocado Layer

  • 1 Avocado, peeled and chopped
  • Juice of 1/2 Lime
  • Salt to taste

Topping

  • 1/2 cup Pico de Gallo (fresh tomato salsa)

Instructions

  1. Drain Tuna: Open the can of albacore tuna and drain the liquid thoroughly to prevent excess wateriness in the salad.
  2. Prepare Tuna Mixture: In a medium bowl, combine the drained tuna, mayonnaise, chopped cilantro, lime juice from half a lime, and 1/8 teaspoon salt. Stir gently until all ingredients are well incorporated.
  3. Prepare Avocado Layer: Peel and chop the avocado, then place in a separate bowl. Squeeze the remaining lime juice over the avocado and lightly mash it, leaving some chunks for texture. Season with salt to taste and mix gently.
  4. Assemble the Salad: On each serving plate, create a layer with half of the avocado mixture. Top this with half of the tuna mixture, spreading it evenly over the avocado. Finish by adding a layer of fresh pico de gallo on top to add brightness and color. Repeat this layering process for the second serving.

Notes

  • Use fresh lime juice for the best flavor and brightness.
  • Adjust mayonnaise quantity or substitute with Greek yogurt for a lighter version.
  • Pico de gallo can be homemade or store-bought, but fresh is preferred.
  • Serve immediately to enjoy the avocado at its best and prevent browning.
  • Adding a pinch of black pepper or a dash of hot sauce can add extra flavor if desired.
