Ingredients
Scale
Potatoes
- 2-3 pounds Russet (Idaho), Yukon Gold, or Maris Piper potatoes
Seasoning & Aromatics
- 1/4 to 1/3 cup extra virgin olive oil
- Juice from 1-2 fresh lemons
- 4-5 cloves fresh garlic, minced or finely crushed
- Dried Greek oregano, to taste
- Salt, to taste
- Freshly ground black pepper, to taste
Liquid
- Vegetable or chicken broth or water, enough to cover bottom of baking dish
Optional Garnish
- Fresh chopped parsley
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare it for baking the potatoes.
- Prepare Potatoes: Wash and optionally peel the potatoes. Cut them into consistent wedges or chunks about 1.5 to 2 inches in size to ensure even cooking.
- Toss Potatoes with Seasonings: In a large bowl, combine the potato chunks with olive oil, lemon juice, minced garlic, dried oregano, salt, and freshly ground black pepper. Toss thoroughly to coat every piece evenly with the flavorful mixture.
- Arrange in Baking Dish: Transfer the seasoned potatoes into a large, shallow baking dish or roasting pan, spreading them out evenly without overcrowding to allow proper roasting.
- Add Broth or Water: Pour enough vegetable or chicken broth (or water) into the bottom of the baking dish so it covers the base around the potatoes, which helps keep them moist during the initial baking phase.
- Cover and Bake: Cover the baking dish tightly with aluminum foil and bake in the oven for 30 minutes. This step steams the potatoes to tenderize them.
- Remove Foil and Stir: Carefully remove the foil from the hot baking dish. Gently stir or flip the potatoes to ensure even cooking and exposure for crisping. Increase the oven temperature to 425°F (220°C).
- Bake Uncovered: Return the uncovered baking dish to the oven and bake for an additional 45-60 minutes. Stir or flip the potatoes every 15-20 minutes to develop a golden brown, crispy exterior.
- Final Seasoning and Serve: Once the potatoes reach your desired crispiness and golden color, remove from oven. Taste and adjust seasoning if needed. Optionally garnish with fresh chopped parsley and serve immediately for best flavor and texture.
Notes
- Use potatoes like Russet, Yukon Gold, or Maris Piper for an ideal balance of fluffiness inside and crispiness outside.
- Cut potatoes uniformly to ensure even cooking.
- Covering with foil during the first bake keeps potatoes tender by steaming them gently.
- Stirring halfway through the uncovered baking promotes even browning and crisp texture.
- Adjust salt and seasoning after baking to your taste.
- Using broth instead of water adds extra depth of flavor.
- For vegan and vegetarian versions, use vegetable broth.
