Description

These Air Fryer Zucchini Corn Fritters are crispy, golden-brown bites packed with fresh zucchini, sweet corn, and Parmesan cheese. They’re a delicious, healthier alternative to traditional fried fritters, using the air fryer to achieve a perfect crisp without excess oil. Perfect as a snack, appetizer, or side dish, they come together quickly and easily for a wholesome treat.

Ingredients

Scale

Vegetables

  • 1 medium zucchini, grated
  • 1 cup corn kernels (fresh or frozen, thawed)
  • 2 green onions, finely chopped

Wet Ingredients

  • 2 large eggs

Dry Ingredients

  • 1/3 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Others

  • Olive oil spray

Instructions

  1. Drain the zucchini: Place grated zucchini in a clean kitchen towel and squeeze out as much excess moisture as possible to prevent soggy fritters.
  2. Mix ingredients: In a large bowl, combine the drained zucchini, corn kernels, eggs, flour, Parmesan cheese, chopped green onions, garlic powder, salt, and black pepper. Mix thoroughly until the batter is well combined.
  3. Preheat air fryer: Preheat the air fryer to 375ยฐF (190ยฐC) and lightly spray the air fryer basket with olive oil spray to prevent sticking.
  4. Form fritters: Scoop 2 tablespoons of the batter for each fritter and place them in the air fryer basket. Flatten each slightly for even cooking. Avoid overcrowding; cook in batches if necessary.
  5. Air fry fritters: Cook the fritters for 8 minutes, then flip each fritter carefully. Continue to air fry for another 8 minutes until they are golden brown and crisp.
  6. Serve hot: Remove the fritters from the air fryer and serve immediately with your favorite dipping sauce for a warm, delicious snack.

Notes

  • Ensure you squeeze out as much moisture as possible from the zucchini to avoid soggy fritters.
  • The fritters can be cooked in batches to prevent overcrowding in the air fryer basket.
  • Use fresh or thawed frozen corn kernels for best texture.
  • If you prefer a crispier texture, you can spray an additional light coat of olive oil halfway through cooking.
  • These fritters are best enjoyed fresh but can be refrigerated for up to 2 days and reheated in the air fryer.
