Instructions
- Drain the zucchini: Place grated zucchini in a clean kitchen towel and squeeze out as much excess moisture as possible to prevent soggy fritters.
- Mix ingredients: In a large bowl, combine the drained zucchini, corn kernels, eggs, flour, Parmesan cheese, chopped green onions, garlic powder, salt, and black pepper. Mix thoroughly until the batter is well combined.
- Preheat air fryer: Preheat the air fryer to 375ยฐF (190ยฐC) and lightly spray the air fryer basket with olive oil spray to prevent sticking.
- Form fritters: Scoop 2 tablespoons of the batter for each fritter and place them in the air fryer basket. Flatten each slightly for even cooking. Avoid overcrowding; cook in batches if necessary.
- Air fry fritters: Cook the fritters for 8 minutes, then flip each fritter carefully. Continue to air fry for another 8 minutes until they are golden brown and crisp.
